The Perfect Pigeon Peas
I eat a lot of beans to support my hormonal imbalance. I especially love pigeon peas (aka congo as we say in Cabo Verde). Try my perfect pigeon peas from scratch and thank me later.
1. Soak pigeon peas overnight (Place a bag of beans in a bowl and fill it with water to the rim).
2. The next day, drain the beans in a strainer and rinse the beans again. Set aside.
3. Chop up half an onion, pepper (green, yellow or red), garlic and *linguica or kielbasa sausage (if you’d like to add meat).
4. Set your pressure cooker to beans + add 15 minutes. You’ll want to cook the beans for 20 min (or longer depending on whether it cooks thoroughly or not).
5. Sautee your veggies while it’s heating up and put your beans in with chicken or vegetable broth. I love this broth since it’s low sodium.
6. Now for the fun part - add some seasoning! I like to sprinkle in creole seasoning, paprika, black pepper & bay leaves for extra flavor.
7. Close the lid and let cook. Once done, taste your beans to see if it’s cooked and well seasoned. Feel free to add more time if you’d like! Voila.
